White Bolognese II

INGREDIENTS

1 Kg Minced Meat
1 Bunch Spring Onion
100 g Parmesan, Freshly Grated
4 Tbsp Oil
2 Tbsp Flour
600 ml Milk
400 g Cream
6 Tbsp Capers (or The Juice Of 1 Large Lemon)
Salt And Pepper

METHOD

1 Clean and wash the spring onions and cut into rings.
2 Heat 1 tablespoon of oil in a pan. Fry the mince in it until crumbly, then season with salt and pepper. Add the spring onions and fry for about 5 minutes. Dust the flour over it and sweat briefly, then deglaze with milk and cream. Add the capers and let everything simmer for about 5 minutes. Stir in half of the parmesan and season the sauce with salt and pepper.
3 Heat 1 tablespoon of oil in a second pan. Fry the gnocchi in it for about 5 minutes until golden brown.
4 Arrange the gnocchi with the sauce and the rest of the parmesan.
