Beer & Cheese Sauce

INGREDIENTS

3 Tbsp Butter
3 Tbsp Flour
1½ Cups Milk
¼ Cup Beer
500 – 700 Gr Sharp Cheddar Cheese
2 – 3 Tsp Worcestershire Sauce
2 – 3 Dashes Hot Sauce
Salt And Pepper (Taste Before Adding)

METHOD

1 Melt the butter in a heavy saucepan.
2 Stir in the flour.
3 Cook, stirring, 1 minute.
4 Gradually stir in the 1½ cups milk and ¼ Cup Beer.
5 Stir and cook until thick.
6 Transfer to a large microwave-safe bowl.
7 Add the Cheese.
8 Microwave for 6 minutes.
9 Take out and stir.
10 Add the Worcestershire and hot pepper sauce.
11 Microwave for another 3 minutes or so, or until the sauce is smooth and hot.
12 Take out and taste for Worcestershire and hot sauce.
13 Place spoon you were stirring with on a clean plate, away from the stove.
14 If mixture seems to harden too fast upon cooling, add a bit more milk.
15 Note: I know this seems like a lot of cheese sauce and you may cut it down if you wish, but the cheese sauce is the main attraction here.
16 It is hard to have “too much”!
17 Assembly is in this order: toast, hamburger, ham, french fries lots of cheese sauce.
