Cheese Straws II

INGREDIENTS

400g Plain Flour
250g Diced Butter
½ Tsp Salt
160g Mature Cheddar
50g Grated Parmesan Cheese Or Other Hard Cheese
1 Tsp Of Mustard Powder
1 Tsp Cayenne Pepper
1 Tsp Of Paprika
2 Eggs

METHOD

1 Sift flour in to a large bowl.
2 Add the mustard, cayenne pepper & paprika.
3 Mix all dry ingredients together.
4 Add butter and rub into flour mix.
5 Add the cheese and mix through.
6 Add egg and mix well to form a dough.
7 Wrap dough in plastic wrap and rest in in fridge for 20 – 30 minutes.
8 Preheat oven to 200C.
9 Roll out dough to 2 – 3mm thick.
10 Cut the dough into 10mm strips and then cut to the length you want.
11 Arrange dough on baking tray with parchment paper.
11 Cook for about 10 – 12 minutes or until golden.
12 Cut dough into 1cm strips.
