
INGREDIENTS
• 2½ cups Penne Pasta
• 4 Zucchini
• 1½ Onions Grated
• 1½ Cups Grated Tasty Cheese
• 200g Ham (diced)
• 3 Carrots (grated)
• 1¼ Cups Self Raising Flour
• 7 Eggs
• 1¼ Cup Milk
METHOD
1 Preheat oven to 180 Celsius .
2 Boil water and cook pasta as per directions for pasta. Drain in a colander and rinse under. cold water. Set aside.
3 Grate zucchini. The recipe said to reduce the liquid by hand, reduce the liquid, place the grated zucchini onto a clean tea towel squeezed out excess liquid and then tipped it into a large mixing bowl.
4 Grate carrot into bowl.
5 Grate onion into bowl.
6 Add the grated cheese into bowl.
7 Chop ham and add to the bowl along with pasta.
8 Add flour to the bowl.
9 In a separate bowl, beat eggs lightly, then add milk and oil and mix again.
10 Add egg mixture to the bowl and mix well so thoroughly combined.
11 Line Lasagne type dish with baking paper.
12 Pour mixture into dish and then place into oven.
13 Bake for 25 minutes or until the bake attains a nice golden colour.
14 Let the bake Sit in the dish for at least 10 minutes before removing to cool onto a rack,
15 Do make sure you remove the bake after 15 minutes, other wise the bottom can go a bit soggy
