
INGREDIENTS (Serves 4)
2 Tablespoons Olive Oil
30 Grams Butter
1 Teaspoon Minced Garlic
4 Rashers Of Bacon (Diced)
¼ Cup Of Parmesan Cheese
4 Cups of Chicken Stork
2 Cups Of Mushrooms Sliced
Chopped Parsley
1 Large Onion
2 Cups of Arborio Rice
1/2 Cup of White Wine
Ground Black Pepper
METHOD
1 Heat Olive Oil and Butter in a Large heavy based saucepan.
2 Add garlic, Onion and Bacon cook for 3 mins.
3 Stir in rice and cook over medium heat for 5 minutes or until rice is slightly coloured,stirring frequently.
4 Add wine and simmer to absorb the liquid .Stirring contantly.
5 Add a cup of stock at a time. Allowing each addition to be absorb and stir well.
6 Add the mushrooms stir well adding of stock if need more liquid add water.
7 Remove from heat stir in the cheese ,parsley and pepper.
NOTES
If you want the rice to be yellow then add Turmeric or Saffron.
