Aussie-style Beef Tacos

INGREDIENTS

500 g Beef Mince
1 Tbsp Olive Oil
1 Medium Brown Onion, Finely Chopped
2 Tsp Ground Coriander
1 Tsp Paprika
1/4 Teaspoon Ground Cayenne Pepper
corn Flour Slurry to thicken Mince liquid for sauce.

+ Salad & Grated Cheese

10 Jumbo Taco Shells

METHOD

1 Preheat oven to 180°C/160°C fan-forced.
2 Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring, for 3 minutes or until softened.
3 Add cumin, coriander, paprika and cayenne pepper. Cook, stirring, for 30 seconds or until fragrant.
4 Add mince. Cook, stirring with a wooden spoon to break up mince, for 8 minutes or until browned.
5 Meanwhile, heat taco shells following packet directions. Divide beef mixture and salad tacos evenly between taco shells. Top with lettuce, chopped tomato and cheese. Serve.
