Bacon and Herb Stuffing

INGREDIENTS

25g Butter
1 Small Brown Onion, finely chopped
3 (90g) Shortcut Rindless Bacon Rashers, finely chopped
4 Slices Bread, crusts removed
1 Tbsp chopped fresh sage leaves
1 Tbsp fresh thyme leaves
1 Tsp finely grated lemon rind
1 Egg, lightly beaten

METHOD

1 Melt butter in a frying pan over medium heat. Cook onion and bacon, stirring, for 6 minutes or until onion has softened. Transfer to a bowl.
2 Tear bread into small chunks. Add to Onion mixture. Add sage, thyme, lemon rind and egg.
Stir to combine. Season with salt and pepper. Set aside to cool completely.
