
A basic muffin mix that can have any fillings added to it::

INGREDIENTS
225 gr Self Raising Flour (Or Mix Half Wholemeal And Half White Flour)
2 Tsp Baking Powder
75 g Melted Butter
175 ml Skimmed/Full Milk
1 Large (60g) Egg (Beaten)
METHOD
1 Preheat the oven to 180C.
2 Simply mix all the ingredients together but do not over mix the mixture. Then fold in the fillings that you wish to use.
3 Fill your Grease and muffin cases or muffin pan 3/4 full and bake for 20 to 25 minutes or until cooked through and golden brown.
4 Serve Hot or Cold.
NOTES
From here you can add 200 Grams of fillings.
Approx 200g Fresh Fruit or Vegetables chopped.
For Fruit Muffins also add 100g soft brown sugar
