
INGREDIENTS
Beef 4 Kg
1 Kg Bacon (Finely Diced)
1 Kg Cheddar Cheese (Grated)
500 ml Ice Water
160 g Massel Beef Stock Powder
4 Tbsp Kosher Salt
12 g Ground Black Pepper
24 g Chives. (Chives have more Onion Flavor).
28 g Garlic Granules or {7 Grams per Kilo [Strong Garlic Flavour]}
METHOD
1 Mince Meat to required texture.
2 Mix herbs and spices and water together to form a slurry.
3 Mix meat and slurry together until combined.
4 Use a large Ice Cream scoop to scoop out the meat and form into rissoles.
5 Crumb the rissoles and freeze.
6 Take rissole out of freezer and bag them up into desired amounts.
