125 gr flour
60 gr (2 oz.) grated cheese
¼ teaspoon baking powder
yolk 1 egg
1/2 teaspoon dry mustard
a little water
a squeeze lemon juice
cayenne pepper
60 Gr Butter
Sift flour, baking powder, cayenne, and mustard. Rub in butter lightly add cheese, and mix well.
Beat egg yolk, add lemon juice and water, then add to dry ingredients, and make into a stiff dough.
Knead lightly, roll out thinly, and cut into small rounds.
Bake in a moderate oven for 15 minutes. Garnish with sprigs of parsley.
