Cheese Straws I

(CWA Recipe)

60 Gr Flour
A Pinch of Salt
30 Gr Butter
Cayenne Pepper
Yolk of 1 Egg
A Few drops of Lemon
60 Gr Grated Cheese

Rub butter into flour, add other ingredients and mix. Roll out thin and cut in strips about 10 cm (4 in) long and 6 mm (1/4 in) wide. Bake for a few minutes till a light brown, in a moderate oven.  180℃

NOTE Cheese Straws should be well kneaded. The above is an excellent recipe. After mixing, take the ball and knead it with fingers as you would knead a lump of plasticine, when fine enough roll out. If it gets a little dry, add a few more drops of lemon juice.
