Cheese Straws III

INGREDIENTS

375g Plain Flour
Pinch Of Salt
225g Diced Butter
150g Mature Cheddar
50g Grated Parmesan Cheese Or Other Hard Cheese
Pinch Of Mustard Powder
Pinch Cayenne Pepper
Pinch Of Paprika
2 Egg Yolks

METHOD

1 Sift flour in to a large bowl.
2 Add butter and rub into flour.
3 Add the cheese and mix through.
4 Add mustard, cayenne pepper paprika and egg yolks and mix well to form a dough.
5 Wrap dough in plastic wrap and rest in in fridge for 20 – 30 minutes.
6 Preheat oven to 190C.
7 Roll out dough to 2 – 3mm thick.
8 Cut dough into 1cm strips.
