One Pot Chef

INGREDIENTS
500g White Fish Fillets (thawed, chopped into chunks)
500g Potatoes (Cubed)
Olive Oil
25g Butter
1 Brown Onion (Diced Finely
2 Tbsp of Plain Flour
1 Vegetable Stock Cube
375 ml Cream (Warm)
Italian Herbs
2 Cups of Frozen Mixed Vegetables (OPTIONAL)
Grated Cheese
METHOD
1 Dice onion into fine dices.
2 Peel and slice the potatoes.
3 Preheat oven to 180C Fan Forced Oven 200C Electric oven.
4 Put a bit of Cream on base of dish.
5 Lay fish in dish.
6 Sprinkle with Salt, Pepper and Italian Herbs.
7 Spread Onion over Fish.
8 Lay the Potatoes over the top.
9 Drizzle the rest of the Cream over the top of the potatoes.
10 Top with Grated Cheese.
11 Finish off with Pepper and Italian Herbs again.
12 Cook for 30 – 35 minutes.
13 If the Cheese gets too dark then cover with foil.
14 Serve on a plate with fresh grated cheese over the top.
