
INGREDIENTS
6 Medium Potatoes For Mashing
1 Tbs Butter
450g Smoked Fish/Tuna
1 Large Handful Of Parsley
Zest Of 1 Lemon
3 Tbs Flour
Salt And Pepper
1 Egg
Fresh Breadcrumbs
METHOD
1 Cook potatoes until tender.
2 Mash the potato with the butter.
3 Let potatoes cool.
4 Add Fish, Parsley, Lemon zest and combine.
5 Add the flour and combine.
6 Add Salt and Pepper.
7 Beat egg for crumbing.
8 Form the fish cakes and dip in egg mixture and place in bread crumbs and coat well.
9 Fry the cakes in fry pan or deep fry.
