
INGREDIENTS
½ Cup Veggie Oil
2 Eggs
2 Cup Dried Rice
3 Slices of Bacon Diced Finely (Rind Removed)
500 Gr Prawns
1 Bunch of Shallots (Spring Onions)
Salt and Pepper
4 Cups Water
1 Tsp Turmeric (Optional)
METHOD
1 Wash rice
2 Heat Oil.
3 Add Bacon and Shallots (White Portion) Cook mixing well 1- 2 minutes.
4 Add Turmeric stir quickly and add Dry Rice.
5 Stir until evenly browned or coloured.
6 Continue to add small quantity of BOILING water, Stirring constantly until water is absorbed.
7 Place lid on pan and simmer for 10 minutes, stirring occasionally.
8 Add Prawns, Chopped greens from Shallots and cook another 5 minutes, stirring occasionally.
9 Take pan from stove and leave stand for at least 2 hours.
10 Reheat to serve. Scramble 2 Eggs and add to the rice when ready to serve.
11 Extra Bacon can be used instead of prawns.
NOTES::
You can add Turmeric to the Oil just before adding the rice so you have Yellow rice.
