{"id":2263,"date":"2023-04-13T22:52:12","date_gmt":"2023-04-13T22:52:12","guid":{"rendered":"https:\/\/grub.fairgomate.net\/?page_id=2263"},"modified":"2023-04-13T22:52:12","modified_gmt":"2023-04-13T22:52:12","slug":"basic-bolognese","status":"publish","type":"page","link":"https:\/\/grub.fairgomate.net\/index.php\/basic-bolognese\/","title":{"rendered":"Basic Bolognese"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2264 size-thumbnail\" src=\"https:\/\/grub.fairgomate.net\/wp-content\/uploads\/2023\/04\/bolognese-150x133.jpg\" alt=\"\" width=\"150\" height=\"133\" \/><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>1 Kg Beef Mince<br \/>\n1 Tbsp Olive Oil<br \/>\n1 Onion (Finely Chopped)<br \/>\n2 Celery Stalks (Finely Chopped)<br \/>\n2 Garlic Cloves (Crushed)<br \/>\n\u00bd Cup (110 g Tomato Paste)<br \/>\n\u00be Cup (185 ml Stock Or Red Wine)<br \/>\n1 X 400 g Can Diced Tomatoes<br \/>\n1 X 700 g Bottle Passata<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>1 Heat the oil in a large heavy-based saucepan over medium heat. Add the onion, celery and garlic and cook, stirring, for 5 minutes or until onion softens. Add mince and cook, stirring to break up lumps for 5 minutes or until browned.<\/p>\n<p>2 Add the tomato paste, stock or red wine to mince mixture and bring to the boil. Reduce heat and simmer for 5 minutes or until stock or wine reduces slightly.<\/p>\n<p>3 Add the diced tomato and passata and simmer over low heat, stirring occasionally, for 45 minutes or until sauce thickens.<\/p>\n<p><strong>NOTE<\/strong><\/p>\n<p>1 For leftovers, divide the Bolognese into 3 to 4 cup portions and freeze in airtight containers or resealable plastic bags for up to 3 months. Thaw in the fridge overnight.
